surrounded by psychologists and orzo salad

that’s right. i was SURROUNDED. psychologists that work at Ft. Deven’s, where the terrorist is i might add. apparently they also make outstanding food. i mean psych’s, not the terrorists. who, you know, suck at everything. holy flashback to a week of hell. and the weekend of lock down hell. my only comfort was a batch of THESE scones and 2 furry animals. thank god for those things, as i refused to the leave my apartment, especially when i could literally hear the bombs and gunfire go off in watertown.

my mom retired from the bureau last year, but that doesn’t keep her from throwing parties for her ex-coworker friends. federal employees get forced into retirement at 58. it’s a glorious thing i tell ya.

where am i going with this. oh right i made an orzo salad for the party. which i ate for 3 days straight it was so good. adapted from bon appetit.

ORZO SALAD

1/4 cup red wine vinegar
2 T fresh lemon juice
1 t honey
1/2 cup olive oil

1 pound orzo, cooked and cooled (i used whole wheat)
2 cups grape tomatoes, halved
1 7-ounce package feta cheese, cut into 1/2-inch cubes
1 cup chopped fresh basil
1 cup chopped green onions

  1. WHISK vinegar, lemon juice, and honey in small bowl. Gradually whisk in oil. Season vinaigrette with salt and pepper. (Can be made 2 days ahead. Cover and chill.)
  2. COOK orzo as directed. Drain. Transfer to large wide bowl, tossing frequently until cool.
  3. MIX tomatoes, feta, basil, and green onions into orzo. Add vinaigrette; toss to coat. Season with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature.) Serve at room temperature.
