spicy edamame hummus

HOLY SMOKES people! let me introduce you to my new best friend. i mean dip. do you love hummus? do you love edamame? read on.

i recently finished a 6-day juice cleanse. in my review, i mentioned that it’s important to start and finish a cleanse by easing yourself in and out of certain foods. thank you BPC for including a recipe in my juice delivery for edamame hummus.

apparently chickpeas (aka garbonzo beans) are tough to digest, so if you’re a lover of hummus like i am, you can basically swap them out for edamame. it very well may have changed my life. i really enjoyed this dip with green bell peppers and pita wedges. no photo today, sorry folks.

SPICY EDAMAME HUMMUS

3-1/4 c water
1-1/2 t sea salt
1 c frozen shelled edamame (8 ounces)
1/4 c sesame tahini
3 T olive oil
3 T lemon juice
1 clove garlic
1/2 t chili powder
pinch cayenne

  1. BOIL water with salt in a saucepan. Add edamame and cook uncovered for 5 min. Drain.
  2. BLEND all ingredients in a blender or food processor until smooth.
  3. EAT.
